Birch sugar (Xylitol) is a sugar substitute **. It owes its name to its discovery in the nutrient-rich fibers of birch bark. Nowadays it is made from non-GM maize.
Natural Xylitol is also found in many fruits, berries and vegetables. In addition, it is produced in small amounts in our metabolism during the processing of glucose (dextrose).
In medicine, Xylitol is used as an energy carrier in infusions.
In food law Xylitol is not considered a food but an ingredient for the processing of other foodstuffs. Xylitol therefore has an E-number, which identifies it as approved additive (E 967).
